Hee! Jam is relevant to transport if... knowing how to make it takes it off the list of reasons you'd have to drive to the shops, say.

Btw, I tend towards the 'equal volume of fruit and sugar and see what happens' school of jam-making. It will change consistency quite significantly when it's ready.

As to 'set' - well, it will benefit from the preserving power of sugar in any event. If it sets to a jammy consistency, congrats, you've got jam. If it's runny, then it's a fruit syrup, or coulis, or sauce; if it's solid like fudge and needs cutting with a knife then you've made fruit cheese. All equally edible, just change what you call it and who's to say what you were aiming for?

My Mum used to keep jam for years, and if it developed a bit of mould on top, we just scraped that off and started on the jam underneath.

Um, we're talking transport, honest, Moderator... out with the bikes and cycling to where the berries are!
